How To Store Food Properly In The Freezer And Fridge
.There are a couple of things to keep in mind when storing food, such as: how to safely handle food to prevent foodborne illness, the types of containers you use, and how long foods normally last in the fridge or freezer. Here are some guidelines from the USDA (and, where noted, other sources):
Handling Food SafelyKeep raw meat, poultry and fish away from other foods so they don’t contaminate them. (This is probably why many fridges have a meat compartment in the bottom of the fridge; if yours doesn’t, store uncooked meat/seafood on the lowest rack to prevent their juices from leaking onto the other foods.)
Also always wash your hands – there’s a best way to do it – before and after handling food, whether cooking or putting it away.
Refrigerator and Freezer Temperature Timing : Freeze or refrigerate perishable food within two hours or one hour if the temperature is over 30C. A general guideline is to eat leftovers within four days. This chart shows pizza and cooked meat or poultry should last three to four days, while lunch meats and egg, tuna or macaroni salads may last three to five days.
Containers : Store the food in the best-fitting, shallow containers. Glass storage containers have the benefit of being easy to check the contents, may be microwavable, and are more eco-friendly. If you have plastic containers already, just check to make sure they’re labelled BPA-free; as dealnews mentions in “6 Best Choices for Food Storage Containers,” if the number on the recycling icon on the container has a “7″ on it, it likely has BPA in it, which may be hazardous. If your kitchen is drowning in food containers, it may be time to trim your stash to include only the most essential types of containers .
One trick for making sure your leftovers actually get eaten, not just stored prettily, is to put the most recently cooked food behind earlier leftovers. If you have trouble remembering when you put the food in the fridge, try using a dry erase marker to note the date on the cover.
Storing Fruits and Vegetables Produce can be tricky to store because some fruits and vegetables are incompatible when stored together. Some fruits emit ethylene gas which can cause vegetables to spoil prematurely. Vegetarian Times recommends keeping these “gas releasers” out of the fridge: avocados, bananas, nectarines, peaches, pears, plums and tomatoes.
Foodsaver Vacuum Sealer - News
15 2011 at 8:00 AM Even if you managed to find an inexpensive solution for cooking sous vide at home, it used to be the case that you were still on the hook for a vacuum sealer, and the $150 FoodSaver was the de facto appliance for the job.
If you're not ready to invest in something like the FoodSaver vacuum sealer, an inexpensive alternative is the Reynolds Handi-Vac vacuum-sealing kit, which works on the same principle of removing air from the accompanying freezer bags.

We are on our third Food Saver. When purchased they work great, but over time they seem to stop sealing, either bag or cannister. We wish we knew then what we know now. To start, DON’T throw out one of these things. Unless we’ve missed it, they don’t tell you that the rubbery gaskets in a lot of these models and this model in particular WEAR OUR. When they do the unit tries to seal but never “gets all the way”. Turns out you can buy new gaskets from the FoodSaver site (though it seems they could do a better job of a material that doesn’t wear out).
We saw advice that you can wash and dry them and they work again. We found that not to help. We DID find that soaking the easily removed gaskets in water and putting them back in and using it right way makes it work like new. The water increases the seal. This is, of course, a pain. But thought people should know.
After having to throw away a huge amount of freezer burned fish, which my husband packed in ziploc bags, I will always use my foodsaver from here on in.
I had a Deni brand vac sealer, but didn’t care for the light weight sealing film. I also found problems with seals failing with the Deni.
After giving up on the Deni, my husband took to using Ziploc Freezer bags, but because of the size, he put too much in and I would end up defrosting 3 pounds of fish at a time, and wasting half usually because nobody here likes leftovers.
I was given the FoodSaver and lots of extras by a friend. The Film is waffled and extra heavy. I have sealed lots of fish and meat since getting this product and have been very satisfied with the performance. The bags can be made to accomodate any portion, the film can even be washed & reused.
I have not yet tried the canister, but after recently tossing some expensive nuts, I think I will soon!
I own a foodsaver and love it. I travel alot and only have so much room in my duffle bag when deploying. I found this product to work as well on vaccuming and sealing clothes as it does on food. I have owned my vaccum sealer for 3years and have deployed with it to Iraq twice. Still going strong. The best thing to deploy with. I also use it at home. I am single and it is hard to buy meals and save when they are family size. This product takes care of that and no waste. The life of my things in the freezer is greatly extended. I don’t get paid enough to throw money down the toilet. I highly recommend this product.
