Recipe Finder: Graham cracker cake
Fannie Felice St. Augustine, Fla., was looking for a recipe for his favorite cakes that her mother-in-law used to do years ago. The cake was made with graham cracker crumbs and no flour. He also had the coconut in the paste and has been glazed with a chocolate whipped cream.
Nancy Snyder Easton, Maryland, sent a recipe she found in one of his cookbooks, "all the cakes Considered" (Chronicle, 2009) by Melissa Gray, whom she thought looked very similar to what was Felice sought. This is not your simple one cuts the cake, but the effort involved in making this beauty is worth the reward.I thought you could simplify the assembly of this cake jumping technique pastry bag and instead spread the whipped cream carefully with a spatula. Graham crackers CAKE
Fact: 10-12 servings
For the cake:
25 graham crackers, crumbled (about 3-1/3 cups)
1 / 2 cup shredded coconut unsweetened
2 1 / 2 c. teaspoon baking powder
1 stick (1 / 2 cup) unsalted butter, at room temperature
1 cup sugar
4 eggs, separated
1 vanilla extract
1 cup milk
Cream teaspoon 1 / 8 scale
For filling and frosting:
1 1 / 4 cup whipping cream, chilled
1 / 6 cup confectioners sugar
1 1 / 2 c. tablespoons unsweetened cocoa
1 / 2 teaspoon of brewed coffee
1 tablespoon Kahlua
For the filling:
1 / 4 teaspoon unsweetened cocoa
Approximately 1 / 4 cup raspberries (optional)
To make the cake: Preheat oven to 350 degrees.Grease and flour (or line with parchment paper), two 8 - or 9-inch round cake pan.
In a food processor, combine graham cracker crumbs and coconut until very fine. Add baking powder and pulse six to eight times. Transfer to a bowl and set aside.
With mixer on medium speed, cream butter until smooth. Add sugar gradually, beating until well blended. Add egg yolks, two at a time, beating 1 minute after each addition. Scrape the bowl. Beat for 1 minute more. Stir in vanilla extract. Reduce mixer to low. Add 1 cup of crumb mixture with 1 / 3 cup milk and mix to blend in.Repeat until all the bread crumb mixture and milk are mixed in. Scrape the bowl and mix 10 seconds more. Set dough aside.
Set up mixer with clean, dry mixing bowl and whisk attachment. Beat the egg whites on medium speed until fluffy. Add cream of tartar and kick the mixer to medium-high. Beat until egg whites reach stiff peaks stage. Do not over beat. Fold one quarter of the egg whites into the batter, taking about five full turns of the bowl. Stir in remaining white, about 10 full turns.
